Gibanica on a plate, with tomato and dill

Gibanica as a hot starter or a whole meal in Novi Sad

GuideHome cooking

Gibanica is a pie made of thin pastry sheets and cheese, and it can play more than one role at the table. Some choose it as a hot starter, some for a simpler lunch, and some because baked pastry is just what they fancy at that moment. So when ordering you don’t have to follow a strict order of courses: your appetite and the rest of your day matter more.

Homemade gibanica is on the Lazin Salaš menu. If you are just getting to know the cooking of our region, it is an approachable place to start. Notice the balance of pastry and cheese, the soft inside and the baked top. It is a different experience from fried dough or breaded cheese, even though all of these can be found among the hot starters.

For a shorter break during your tour of Novi Sad, you can make gibanica the main part of your order. For a longer lunch, consider whether you want it before a stew or a meat dish. If you come with others, choose different dishes and compare who likes what best.
